Rolled Up Goodies
Ingredients: Filling
Meat: The original version was with ground beef, but other meats will work. Original had 200 g of ground beef, which is about a little under a half pound.
1 or 2 carrot(s), chopped fine
8-10 Mushrooms, sliced
1 medium to large Onion, chopped thick
1 clove Garlic, crushed
Grated cheese as you like.
Spices--oregano, basil, parseley, whatever.
Dough:
water, flour, yeast, sugar. I don't measure, but be careful. the dough should be neither crumbly (needs more water) nor sticky (needs flour).
Sauce:
1 red pepper, chopped into strips.
7 mushrooms.
1 onion chopped.
2 Tomatoes peeled.
Spices, the usuals or whatever you want.
Red Wine.
Butter and oil.
1. Make the Filling. In a pan, put a little oil and heat it up. Add the carrots and onions in the pan. Once these are cooking nicely, add the beef and mushrooms. Once that is doing its thang, add spices. Pour in a little water--just a little. This will reduce out. Add garlic.
2. Make the dough. In a bowl, pour in a teaspoon sugar and a little water. Add yeast. Next, add some flour. I cannot say how much, since i did it all on the fly. But, if you are unsure, check a recipe for pizza dough. I used wheat flour.
--Stir up the mixture in the bowl. Make sure it all gets mixed up. Once it seems to begin to take form, start working it with your hands. If it is sticky, add flour; if crumbly, add water. Once you get it to the right balance, work it with your knuckles. Knead it with your fingers. Work it into a ball. Again, the dough should not be crumbly or sticky.
--Let the dough sit in the bowl with a damp towel over it for about 30 minutes. Yes, 30 minutes. Then, split it up into quarters. Work each of the four into balls. On a surface covered with flour, roll the dough out.
3. On each dough section, add grated cheese in the middle in a row. Take the filling from the pan and add it over the cheese. Remember this has to be rolled up, so too much and it doesn't roll over. Repeat.
4. Making the sauce. In a pan, fry up pepper and mushrooms and onion. Reduce heat. Add wine. Heat at a fairly high temperature to get the wine cooking out. Add peeled chopped tomatoes and spices, butter and oil--just a little. Keep stirring. THe liquid will reduce, but if it is doing so fast, add a little water.
5. Place the rolled up things into the oven on a surface. I rolled them up and put them in aluminum foil. Cook at 200' c. until dough is cooked.
6. On a plate, pour the sauce over the rolled up things.
