Guacamole Bagels with Baked Cheese
Ingredients: 2 avocados
1 hot pepper, seeded and chopped.
2 cloves garlic, peeled
Coriander
Salt
As desired: Drained tomato or two, chopped onion, chopped sun-dried tomatoes.
Bagels
Cheddar and Monterey Jack Cheeses (here in Germany, I've used some Butter Cheese or Gouda)
As desired: grilled turkey breast medallion (as in, cut up to fit onto the bagel), sliced turkey (from the deli, for instance)

1. A) Cut the avocados in half length wise. There is a pit in there in the fat part. Once cut in half, pull apart. The pit should be visible. Pull it out. Then, depending on how ripe the avocado is, pull the 'meat' out away from the skin. If it is not coming out, take a spoon and start spooning it out. B) Chop up the avocado into relatively small pieces and put it into a mixing bowl. C) Mash it up as best as possible either with a food blitzer thing or with a potato masher or with a fork. 2. A) WITHOUT SMALL FOOD PROCESSOR: Take the garlic and put it through your press. Add it to the avocado mix. B) Chop up the hot sauce fine. Add it to the avocado mix. C) WITH SMALL FOOD PROCESSOR, put ½ or ¼ a hot pepper in to the processor with the garlic and a wee bit of water. Blitz it till it is liquid. Pour into the avocado mix. 3. Add the rest of the ingredients. 4. Mix it all up again-either with a food processor or with a potato masher. If you want it smoother, add one or two peeled and chopped tomatoes. 5. Toast bagel, put guacamole on top of it, cover with (meat as desired, then) cheese. Grill until the cheese is as hot and melted as you like.
