A Great Tasting Sauce
Pan Chicken, Pan Sauce

Ingredients:
Turkey Cutlets or Chicken or Steak or that other white meat
1 Red Pepper, cut up into strips
8-10 Mushrooms, sliced
1 medium to large Onion, chopped thick
1 clove Garlic, crushed
4-6 oz. Red Wine, about a glass full
Yogurt-enough to make the sauce creamy. Use as thick or thin a type as you'd like.
2 Tablespoons Butter
2 oz. Steak Sauce
Dash(es) of Tabasco
Basil, Salt, Parsley.

1. Make the Sauce. Take the Red Pepper, Mushrooms, and Onion and fry them up in a pan with either Pam cooking spray or a little oil. Start with the heat high, then let it down a little. Let it get real hot. Keep stirring it around. Once the Onion is turning brown, pour in Garlic. Next, put contents of pan into a sauce pan or a smallish pot. Clean pan, because you will be using it to cook the Meat.
2. Add wine. Add Salt, Basil, Parsley. Add Tabasco. Add Yogurt. Not too much. The sauce will be reduced, so don't worry. The liquid part should just cover the veggies. Heat up till boiling. Add butter and steak sauce. Let continue boiling over low to medium heat. After a little bit, try a taste.
3. Once the sauce is fairly well on its way, it's time to do the meat. It really depends on the type of Meat you are using, but here's a general rule of thumb. The idea is that you are sealing the Meat only; then, you are going to pour the sauce over it in the pan and finish cooking it that way. So, in the pan, spray Pam or put in a little oil. Heat up. Add Meat. Cook just till it seems cooked on the outside. Add Sauce from Pot.
4. The Sauce should still be very liquidy when added to Pan. It will reduce fairly quickly in the pan. Once it has reduced to the consistency you desire, take it off the heat. It's ready to serve. You can either take the Meat out and put it on plates and cover with sauce, or you can just serve it right out of the pan.

As a side dish, you could serve steamed veggies. If your people are really hungry, add some pasta with the steamed veggies and top with olive oil and parmesan cheese.
